A single First Fill Oloroso Sherry Butt shapes this Symington's Choice release. The 2005-vintage Speyside single malt matured for 21 years in cask 102 before Signatory Vintage bottled it on 21 August 2026. The cask was filled with the whisky on 11 July 2005. The release comprises 668 numbered bottles.

The long Oloroso maturation brings together dark fruit and spicy oak. Alongside figs and ripe plums are prunes, nutty sherry sweetness and caramelised sweetness. A slightly peppery note provides a contrast. The whisky was bottled at its natural cask strength of 58.3%, without chill filtration or added colouring. The 0.7-litre bottle comes in a black metal tin with orange accents.

Tasting Notes:

• Nose: Dark figs and ripe plums lead on the nose. Pronounced Oloroso notes combine with subtle oak spice.
• Palate: The palate reveals concentrated fruitiness with plums and figs, alongside intense sherry character. A delicate peppery heat provides a spicy counterpoint.
• Finish: The long finish is dry. Austere oak notes come to the fore while the sherry character remains.

Distillery/Bottler:

Signatory Vintage is an independent Scottish bottler founded by Andrew Symington and his brother in 1988. Andrew's interest in the differences between individual whisky casks developed while he was working at Prestonfield House Hotel in Edinburgh. The company name derives from the original idea of having bottles signed by famous personalities. Its first release was a 1968-vintage Glenlivet.

The acquisition of Edradour distillery in 2002 gave Signatory Vintage a new home near Pitlochry. The business had fully relocated there by 2007; warehouses accommodating more than 20,000 casks were added later. Andrew Symington personally selects the releases for Symington's Choice. This single malt comes from an unnamed Speyside distillery and bears the designation Speyside (M).
