Special Features:

The Stauning Core Set brings together three distinct whiskies from the Danish distillery: one 0.05-litre bottle each of HØST at 40.5%, R.Y.E. at 48% and KAOS at 46%. These strengths belong to the individual miniatures; the set contains 0.15 litres of whisky in total.

For HØST, Stauning marries single malt with whisky made from malted rye to create a Double Malt. Maturation in first-fill bourbon casks and heavily charred new American white oak casks is followed by a finish in first-fill port wine barriques. Alongside vanilla, honey and red berries, its range of aromas includes apple, pear, apricot, cherry, dried fruit, fresh hay, floral notes, caramel, toasted oak and malty grain.

R.Y.E. is made from local rye and barley and matures in new American white oak. Rye bread, pepper and citrus peel mingle with cherry, dried fruit, vanilla and caramel. For KAOS, Stauning marries its rye whisky with unsmoked and smoked single malt. The whisky matures in new American oak and first-fill casks, bringing grain, chocolate, caramel, cinnamon, apple, orange, dried red fruit and campfire smoke to the set.

Tasting Notes:

• Nose: HØST has aromas of vanilla, beeswax and citrus fruit. R.Y.E. offers freshly baked rye bread, wine gums and a hint of pepper. KAOS combines grain, chocolate, oak, caramel and cinnamon with campfire smoke.
• Palate: On the palate, HØST combines meadow honey and toffee with apple and red berries. R.Y.E. shows dried fruit and ripe cherry alongside peppery oak, vanilla and citrus peel. In KAOS, smoky chocolate notes meet nougat, caramel, liquorice, sweet apple and oak.
• Finish: HØST finishes with a syrupy character, cinnamon, oak and gentle spice. R.Y.E. has a long, soft, fruity and sweet finish, with pepper lingering. KAOS leaves a long, smoky finish with vanilla, orange, tobacco, dried red fruit and oak.

Distillery/Bottler:

Stauning Whisky A/S began in 2005 on Denmark’s west coast as a project by nine friends. They made their first whiskies in a former butcher’s shop and opened a purpose-built distillery in 2018. Stauning malts regional rye and barley on its own floors and distils twice in 24 small, directly fired copper stills. The three whiskies in the set mature on site and are bottled there by Stauning.
