Locally harvested pine shoots give this dry gin a distinctive connection to Denmark’s west coast. They complement a classic recipe of juniper, coriander seeds, angelica root, orris root, liquorice root and lemon peel. Juniper leads the character, with citrus freshness, gentle spice and light herbal notes accompanying the subtle pine note.

The botanicals steep in alcohol for 24 hours before being distilled using the one-shot method in a direct-fired copper still. The heart of the distillate is selected for the gin, while the heads and tails are separated. Water from Stauning then brings it to 43% alcohol. The bottle contains 0.7 litres.

Its full flavour combines with a soft mouthfeel. For a classic gin and tonic, a twist of lemon zest complements the gin by highlighting its citrus notes.

Tasting Notes:

• Nose: On the nose, fresh pine needles and juniper combine with a light citrus note.
• Palate: The palate opens with juniper and a pine-like note. The pine shoots then add a resinous, lightly spicy impression.
• Finish: The finish is soft, rounded and balanced.

Distillery/Bottler:

Stauning began in 2005 as a project shared by nine friends in a small village on Denmark’s west coast. Their first experiments took place with two small stills in a former butcher’s shop. Local barley was malted on the floor of the cold room, and a converted meat grinder was used for milling. These improvised beginnings grew into a whisky-making operation of its own.

Even after opening its purpose-built distillery in 2018, Stauning continued to use locally grown rye and barley, its own floor malting and small, direct-fired stills for its whiskies. With Danish Dry Gin, the distillery also uses direct firing, while locally harvested pine shoots provide a different regional accent.
