Special Features:

Stauning HØST is a Double Malt made from barley single malt and malted rye whisky. Both grains come from the area around the distillery and are floor-malted there. The spirits are double-distilled in 24 small, direct-fired copper stills.

The whisky first matures in first-fill bourbon casks and heavily charred new American white oak casks. A subsequent finish in first-fill Port wine casks adds to its fruity character. HØST means “harvest” in Danish. The lighter bottle introduced with the new design contains the same whisky at 40.5% alcohol.

Alongside apple, pear and apricot are red berries, cherry and dried fruit. Honey, caramel, warm spices and toasted oak accompany malty grain notes, with fresh hay and floral hints adding another dimension.

Tasting Notes:

• Nose: On the nose, vanilla and citrus notes mingle with beeswax.
• Palate: On the palate, meadow honey and toffee meet apple and red berries.
• Finish: The finish has a syrupy texture, bringing cinnamon and oak together with subtle spice.

Distillery/Bottler:

Nine friends founded Stauning on Denmark’s west coast in 2005 and began making whisky in a former slaughterhouse. Even after their purpose-built distillery opened in 2018, local grain, floor malting and small, direct-fired copper stills remained central to their approach.

Stauning matures its whisky on site and bottles HØST there itself. Bringing together its two house styles of barley and rye spirit continues the idea of making whisky from the distillery’s immediate surroundings.
