Stauning Smoke gets its smoky character from an unusual choice in malting: locally grown barley is floor-malted at the distillery, then smoked over peat and heather from the surrounding area. The result brings together smoke, citrus fruit, honey and herbs rather than relying on peat notes alone.

For Batch 1-2022, the spirit is distilled twice in small, directly fired copper stills. The whisky then matures in a combination of first-fill bourbon casks, Madeira, rum and wine casks, and casks made from new American oak. The miniature contains 0.05 litres at 47% alcohol. Stauning bottles the whisky without colouring or chill filtration.

Tasting Notes:

• Nose: Gentle campfire smoke accompanies lemongrass, honey and rosehip.
• Palate: On the palate, pronounced citrus notes mingle with heather smoke, vanilla and dried herbs.
• Finish: Singed heather and warm spices linger on the finish.

Distillery/Bottler:

Stauning began in 2005 when nine friends set out to make whisky from regional ingredients on Denmark’s west coast. Their first experiments took place in a former butcher’s shop; in 2018, their purpose-built distillery in Stauning began operating.

Even at the larger distillery, Stauning has kept methods from its early days: the grain germinates on the floor, and 24 small copper stills are heated by direct flame. Smoke is made exclusively from malted barley, which acquires its smoky character when dried over local peat and heather.
