Stauning Smoke Tawny Port Cask brings together Danish barley and the sweet fruit character of Portuguese Port casks. The barley is floor-malted at the distillery and smoked with local peat and heather. After double distillation in small, direct-fired copper pot stills, the whisky matured in first-fill Tawny Port casks from Porto.

The smoke of western Jutland combines bonfire notes with thyme and heather honey. Port cask maturation adds sweet fruit and toffee to this character, while the smoke remains prominent. At 50.3%, this limited official bottling is powerful; it retains its natural colour and is non-chill-filtered.

Tasting Notes:

• Nose: The nose reveals sweet bonfire smoke with thyme and heather honey. Lemon sorbet, toffee and beeswax round out the bouquet.
• Palate: The whisky is full-bodied and smoky on the palate. Salted caramel and candied citrus combine with creamy caramel pudding, apricot and nectarine. A hint of tobacco and soft smoke accompany the sweet notes.
• Finish: The medium-length finish leaves ripe plum and toffee. Gentle smoke continues to linger.

Distillery/Bottler:

Nine friends founded Stauning in 2005 in a former slaughterhouse on Denmark’s west coast. Their first equipment was improvised: they malted barley on the cold-room floor and used a meat grinder to mill it. They later set up a distillery in a converted farmhouse. These beginnings developed into an established approach using local grain, floor malting and small, direct-fired pot stills.

In 2018, Stauning opened a purpose-built modern distillery near Skjern. Despite the increased production capacity, floor malting and direct firing were retained. The Tawny Port edition is a single malt from the distillery and an official Stauning bottling.
