el Jimador Blanco undergoes no cask maturation, giving it a different character from the brand’s aged expressions. It is made exclusively from hand-harvested blue Weber agave. The tequila is distilled twice and then bottled without ageing in wood.

Fresh citrus and peppery spice define this tequila, complemented by sweetness and herbal notes. No sugar or artificial sweeteners are added. The Blanco can be enjoyed neat or used in classic agave cocktails such as Margaritas and Palomas. The bottle contains 0.7 litres of tequila at 38% alcohol.

Distillery/Bottler:

Casa Herradura produces el Jimador in Amatitán, in the Mexican state of Jalisco. The brand was introduced in 1994 to make tequila made from 100% agave accessible to a wider audience. Its name refers to the jimadores: these harvesters use a cutting tool called a coa to expose the heart of the agave plant, which provides the raw material for tequila.

Production includes fermentation in open tanks. Naturally occurring yeasts from the surroundings convert the sugar in the agave juice into alcohol; no commercial yeast is added. This is followed by double distillation. While other el Jimador expressions subsequently mature in American white oak, the Blanco skips this step.
