For this 21-year-old Irish blend, That Boutique-y Whisky Company brings together malt and grain whiskeys from four cask groups: former rum casks, refill bourbon hogsheads, Oloroso butts and Pedro Ximénez butts. Part of the Core Range, it is released in recurring small batches of around 1000 litres. The whiskey is bottled at 45.8%, without chill filtration, and retains its natural cask colour.

Its cask-influenced character combines tropical fruit and honey with candied nuts, figs, other dried fruit, dark chocolate, baking spices and mature oak. A Connemara pony appears on the shamrock-green comic-style label.

Tasting Notes:

• Nose: The nose offers pineapple, white peach, banana and pear, accompanied by vanilla and runny honey.
• Palate: On the palate, banana, mango and guava join candied nuts and a light touch of pepper. Brown sugar and dry spices complement the fruit.
• Finish: Dry spices, a tart hint of green tea and mellow, mature oak shape the finish.

That Boutique-y Whisky Company is an independent bottler and producer of blends. The brand launched in 2012 with bottlings from four Scottish distilleries. Atom Brands developed it and includes it in its portfolio. That Boutique-y Whisky Company selects whiskeys from different origins and gives its bottlings hand-drawn labels; Emily Chappell has created the illustrations since the brand’s launch.

In 2023, That Boutique-y Whisky Company received the Spirits Bottler of the Year award. Its own blends, independent bottlings and illustrated labels also come together in this Core Range release.
