Virgin Portuguese oak casks shape the character of the second Wonders of Wood edition. The whiskey spends its entire maturation in these previously unused casks, rather than simply receiving a finish in them. Its grain recipe consists of equal parts malted and unmalted barley. Following triple distillation in Dublin and cask maturation, this Single Pot Still Whiskey is bottled at 50% without chill filtration.

Wonders of Wood explores how different woods influence the flavour of Irish whiskey. With each release, Teeling works with the Tree Council of Ireland to support the planting of native Irish trees on designated sites.

Tasting Notes:

• Nose: The nose reveals ripe red fruit, berries and pears, accompanied by toasted wood and spices.
• Palate: On the palate, fruit and spice meet oak tannins and burnt sugar.
• Finish: The finish combines honey and spices with lingering fruit notes.

Distillery/Bottler:

Teeling is based in Dublin’s Liberties district, a historic centre of whiskey production. The family’s history dates back to 1782, when Walter Teeling established a small distillery on Marrowbone Lane. Jack and Stephen Teeling opened the present distillery near that earlier site in 2015. It was Dublin’s first new distillery in over 125 years.

The distillery works with different grain recipes and maturation methods. Wonders of Wood focuses on the deliberate selection of unusual cask woods. The Portuguese oak used for this edition is part of an approach that investigates not only a cask’s previous contents, but also the wood itself as an influence on flavour.
