Special Features:

A beer-cask finish links this Irish blend with the Blacks of Kinsale brewery. The blend of 75% grain whiskey and 25% malt whiskey first matures in first-fill bourbon casks. The whiskey then undergoes further maturation in casks that previously held the brewery’s India Pale Ale. This bottling belongs to West Cork’s Beer Series and comes in a 0.7-litre bottle at 40% alcohol.

Alongside hops, nuts, malt and sweet spice, the whiskey also reveals pineapple, mango and sweet cereal notes. Bitter hop accents and herbal undertones complement this fruity side. The whiskey is triple-distilled and bottled without chill filtration.

Tasting Notes:

• Nose: The nose reveals a gentle hop note with sweet undertones.
• Palate: On the palate, toasted nuts and malt combine with sweet spice notes.
• Finish: Toasted nuts, malt and sweet spice remain present in the finish.

Distillery/Bottler:

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. Their first distillations took place using two small stills in a room behind Denis’ house in Union Hall. As the business grew, it moved to Skibbereen in County Cork in 2014. The team built some of the distillery equipment themselves.

In Skibbereen, West Cork Distillers brings together distillation, maturation and bottling at its own site. The distillery has both pot stills and continuously operating column stills. Casks are stored in twelve warehouses on the premises. For the IPA Cask Finish, the collaboration with Blacks of Kinsale complements this in-house production with the influence of casks previously used for beer.
