Balcones Texas Single Malt brings Scottish Golden Promise barley to whisky making in Waco, Texas. The spirit is distilled in copper pot stills and matured in oak casks tailored to this bottling. Each batch combines whiskies from different distillation years and cask types, making cask selection an essential part of this whisky.

Its character combines toasted notes with malty sweetness, baked fruit, cinnamon and marmalade. The mouthfeel is full and enveloping. This official bottling has an alcohol content of 53% and comes in a 0.7-litre bottle, without added colouring or chill filtration.

Tasting Notes:

• Nose: The nose reveals ripe stone fruit with a buttery note, banana and pear. Honey and citrus notes complement the fruity aromas.
• Palate: On the palate, the whisky recalls toasted bread with fresh butter and marmalade.
• Finish: Toast and burnt sugar linger on the finish, accompanied by robust malt notes and spicy oak.

Distillery/Bottler:

Balcones was founded in Waco in 2008. Its first production premises were in a former workshop, and the founders built some of the equipment themselves. Single malt was an early ambition, but they initially worked with corn, which was readily available locally. In 2016, the distillery moved into the historic Texas Fireproof Storage building in central Waco, where new copper pot stills from Scottish manufacturer Forsyths were put into service.

A distinctive resident microflora within the production equipment is part of Balcones' approach. The wort is not boiled before fermentation; between runs, the team removes solid residues without sterilising the equipment. Texas's fluctuating temperatures are also deliberately incorporated into production. The team judges the distillation cuts itself, without using sensors or thermometers. Winding vapour pipes and all-copper condensers provide additional copper contact.
