A finish with toasted aspen staves complements this rye's maturation in new, heavily charred American white oak. Distillery 291 used only Colorado-grown rye for this three-year-old whiskey. That Boutique-y Whisky Company bottled 294 bottles from a single cask at a natural cask strength of 66.6%. Batch 2 belongs to the USA series; without this independent bottling, the whiskey would have been destined for the distillery's experimental E Series.

The whiskey is neither chill-filtered nor coloured. The bottle contains 0.5 litres and comes in gift packaging.

The label depicts distillery founder Michael Myers as a catcher on a baseball team. He holds a whisky thief, a tool used to draw whiskey samples from a cask.

Tasting Notes:

• Nose: The nose offers spice, herbs and a slightly rustic, farmyard impression. Pronounced rye bread dough notes meet malt, Jamaican ginger cake and coffee sweets. Fennel and anise add subtle accents.
• Palate: On the palate, warming spice gives way to sweet coffee notes. Toasted rye bread, toasted grain and peppercorns join them.
• Finish: A hint of chilli chocolate lingers on the finish.

Distillery/Bottler:

Distillery 291 is located in Colorado Springs at the foot of the Rocky Mountains, near Pikes Peak. Founder Michael Myers previously worked in New York as a fashion and beauty photographer. He used copper photogravure plates from his photographic work to build his first still. On 11 September 2011, he distilled whiskey with it for the first time. The distillery uses grain from Colorado's plains and water from the reservoirs at Pikes Peak.

For this rye, the mash is acidified in open fermentation vessels and then distilled three times in locally made pot stills.

That Boutique-y Whisky Company is an independent bottler that selects whiskies from distilleries around the world and also creates its own blends. Its range includes unusual small batches and whiskies that depart from a distillery's customary style. The hand-drawn labels tell stories about the respective distillery or offer clues to the whisky's origins.
