Special Features:

For Batch 3, Distillery 291 made a mash of 100% German malted rye. The distillery soured it in open fermenters and triple-distilled the fermented mash in pot stills built on site.

The straight rye matured for three years in new, heavily charred American white oak. The aspen staves used for the finish came from a property near the distillery. Had That Boutique-y Whisky Company not selected it, the whiskey would have been destined for Distillery 291’s experimental E Series. The single cask yielded 295 bottles at a natural cask strength of 67.8%. Each bottle contains 0.5 litres and comes in gift packaging. The whiskey is not chill-filtered and contains no added colouring.

Alongside spicy rye and herbs are peppercorn and paprika, as well as granola and dried berries. Cocoa, chocolate fondant and allspice add darker notes.

Tasting Notes:

• Nose: On the nose, spicy malted rye and toasted rye bread meet herbs and a light floral note. Blackberry leaves, clove and a hint of gingerbread round out the aroma; compared with the Colorado Rye, it is softer and sweeter.
• Palate: The palate opens with bold spice, followed by toasted rye bread, nutty grain and a touch of bitter chocolate. Leafy herbs and blackberry brambles accompany the flavours.
• Finish: Spice returns in the long, chocolatey finish.

Distillery/Bottler:

Michael Myers founded Distillery 291 in Colorado Springs. Previously a photographer, he built his first still from copper plates he had used for photogravure. He distilled his first whiskey with it in 2011. For this batch, that original still served as a thumper in the third distillation step.

Distillery 291 produced this straight rye. That Boutique-y Whisky Company bottled the whiskey from the selected single cask as Batch 3 in its illustrated baseball-card series. The independent bottling brand belongs to Atom Brands and was launched in 2012.
