Special Features:
This Texas rye is made from 81% non-GMO Texas rye, 14% corn and 5% malted barley. Yeast obtained from organically grown pecans drives fermentation for three to five days, after which the spirit is distilled twice in a column still. Before maturation, it is adjusted to no more than 62.5% and then spends at least three years in newly charred 200-litre American white oak casks with a level 3 char.
Texas temperature fluctuations encourage repeated interaction between the whiskey and the wood. This allows the rye to develop maturity, character and balance more quickly. After maturation, it is reduced to 45% with natural Black Forest spring water. Unlike the brand’s Habanero Bourbon, this rye contains no added habanero.
Its profile combines bold rye spice with restrained sweetness. Pepper, cinnamon, clove and nutmeg contrast with caramel, vanilla and maple syrup, while toasted oak, tobacco and dark chocolate add depth. Candied orange and dried apricot provide fruity accents, and the charred cask contributes a subtle smoky nuance.
Tasting Notes:
- Nose: Black pepper and cinnamon emerge first on the nose. Restrained notes of caramel and vanilla follow, with roasted pecans and a little leather in the background. Candied orange and dried apricot develop over time.
- Palate: The palate displays characteristic rye spice alongside black pepper, clove and a pinch of nutmeg. Maple syrup and vanilla balance the spice before toasted oak, a little tobacco and dark chocolate emerge. The texture is creamy, buttery and full-bodied.
- Finish: The finish is long and warming. The spice notes gradually fade, making way for caramel and roasted nuts.
Distillery/Bottler:
The Horse's Spirit Company grew out of an idea conceived by Alexander Stein in 2019. It was inspired by the song «A Horse with No Name». The first product developed was a bourbon with habanero, followed by a bourbon without this addition and the characterful Texas Rye.
The company developed the mash bill for the Texas Rye together with Firestone & Robertson. The Texas company handles distillation and cask management and has been led by Leonard Firestone and Troy Robertson since 2010. Its Whiskey Ranch was created on a former 18-hole golf course in Fort Worth.
Bottling takes place at the JACoBI wine distillery in Weinstadt. The specially designed bottle is inspired by a cut-glass hip flask from the 1920s.
