Sugar maple charcoal mellowing shapes the smooth, refined character of Jack Daniel's Old No. 7. It is made from corn, rye and malted barley, with iron-free water from the Cave Spring. After double distillation, the Tennessee whiskey passes drop by drop through a ten-foot-deep layer of charcoal. It then matures in new charred American white oak barrels stored on different levels of the warehouses.

Caramel, vanilla and wood combine with a slightly fruity aromatic character. Orange, brown sugar and spice complement these notes.

Tasting Notes:

• Nose: The nose reveals vanilla, caramel and almond at moderate intensity. Fruit notes gain maturity through ageing.
• Palate: The whiskey is pleasantly dry on the palate.
• Finish: The finish is smooth and rounded. Tannin and wood give it a robust structure.

Distillery/Bottler:

The Jack Daniel Distillery produces and bottles Old No. 7 in Lynchburg, Tennessee. It is America's oldest registered distillery and is listed on the National Register of Historic Places. Jack Daniel moved the distillery to the Cave Spring, whose iron-free water is still used in production today.

Jack Daniel retained the elaborate Charcoal Mellowing process when other producers switched to less expensive methods. His nephew and successor, Lem Motlow, continued this practice after Prohibition. In 1956, the Motlow family handed the distillery over to the Brown family; drop-by-drop mellowing through sugar maple charcoal remained part of the process.
