KOVAL Millet uses millet as the sole grain in an American whiskey. KOVAL works with organic grain and selects only the heart cut, the middle portion of the distillate. This selection contributes to its clear, bright profile. The whiskey matures in new American oak from Minnesota. As a single-barrel whiskey, the contents of each cask are bottled separately.

The European 0.5-litre version contains 40% alcohol and is bottled without chill filtration. Its grain character combines with nuts and vanilla, while spicy notes accompany the bright finish.

Tasting Notes:

• Nose: The nose reveals sweet grain, hay and light floral notes, accompanied by vanilla and caramelised sweetness.
• Palate: The whiskey is powerful on the palate, with nuts and vanilla taking the lead. Caramel, oak and dark fruit complement the flavour.
• Finish: The finish is bright and clear, with spicy notes that linger.

Distillery/Bottler:

Dr. Sonat Birnecker Hart and Dr. Robert Birnecker founded KOVAL Distillery in Chicago in 2008. The distillery processes organic grain from the American Midwest and handles production itself, from milling to bottling. It uses charcoal-purified water from Lake Michigan, along with non-GMO yeasts and enzymes. During distillation, KOVAL separates out the heads and tails, using the heart cut for its whiskeys.
