Special Features:

Noah’s Mill Small Batch is a Kentucky Straight Bourbon from Bardstown, released without an age statement. Its mash bill consists of 72% corn, 13% rye and 15% barley. The bourbon is bottled at 57.15% alcohol, or 114.3 proof.

The spirit enters the barrel at 125 proof and is later bottled at 114.3 proof. Walnut, dark plum and floral notes shape the aroma, while spice, lavender and burnt caramel emerge on the palate. The bourbon is not chill-filtered and contains no added colouring.

Tasting Notes:

• Nose: The nose brings walnut and dark plum alongside floral notes and a hint of cinnamon.
• Palate: The bourbon is full-bodied on the palate. Walnut and plum meet spice and lavender, while a touch of acidity balances the burnt caramel.
• Finish: Caramel and oak linger through the long, warming finish. Honey-roasted nuts and green apple follow, with pepper lingering at the end.

Distillery/Bottler:

Thompson Willett founded Willett Distillery in 1936 on the family farm in Bardstown. The first barrel was placed in Warehouse A in 1937. The distillery remains family-owned, and Noah’s Mill is part of its whiskey range.

Willett distils Noah’s Mill, matures the whiskey and bottles it itself. Drew Kulsveen has developed further grain recipes for the distillery’s bourbon and rye range.
