Sonoma California Smoked Bourbon combines corn and rye with barley malt that the distillery smokes over cherry wood itself. The whiskey thus gets its smoky character from wood-smoked malt. After at least three years of cask maturation, the straight bourbon is bottled at 46%.

Maraschino cherry, vanilla and caramel mingle with cherry wood smoke and the spice of allspice and pepper. Light ashy notes complement this contrast between fruit, sweetness and smoke. Maturation takes place in new American white oak casks.

Tasting Notes:

• Nose: The nose reveals caramel, cherries and spicy oak with a hint of vanilla.
• Palate: On the palate, vanilla, cane sugar and candied citrus meet black pepper and a light ashy note.
• Finish: The finish is medium in length, with nutmeg, rye, cherries and vanilla alongside a smoky nuance.

Distillery/Bottler:

Sonoma Distilling Company produces the bourbon in California and releases it as an official bottling under its own brand. Founder and whiskeymaker Adam Spiegel established the distillery in 2010 after discovering his passion for spirits production while working at a distillery in Santa Rosa.

The distillery takes a grain-to-glass approach, processing locally sourced grain into finished whiskey on its own premises. The grain comes from within a radius of around 160 kilometres. The whiskeys are distilled twice in handcrafted copper pot stills, with Spiegel combining American methods with influences from Cognac and Scotch whisky production. For this bourbon, the distillery smokes the barley malt over cherry wood itself.
