The roots of today's Wild Turkey distillery in Lawrenceburg go back to 1869, when the Ripy brothers established their operation there. The Wild Turkey brand name came about in 1940 after a company representative shared his bourbon with friends on a turkey hunt. Jimmy Russell joined the distillery in 1954, followed by his son Eddie in 1981. Eddie worked his way through various roles at the distillery and also became Master Distiller in 2015.
The distillery stands on Wild Turkey Hill beside the Kentucky River and uses limestone-filtered water and its own yeast strain. Its grains include corn, rye and malted barley. Distillation takes place first in a continuous process, followed by a second pass. Wild Turkey uses new American white oak barrels with Alligator Char for maturation. The spirit enters the barrels at a comparatively low alcohol strength, reducing the amount of water needed after maturation to reach bottling strength. The barrels are stored in traditional timber warehouses clad in sheet metal. From the second year of maturation onwards, the bourbon is tasted annually until the Master Distiller approves it for bottling.
