Special features: Le Cognac de Paul Lot L57 is a single cask from the Grande Champagne region, considered the liquid legacy of Paul Gaillard. For three generations, the family carefully preserved this heritage before Paul's granddaughter Carole honored him with this limited cask strength bottling (319 bottles). Production takes place at the organic-certified family business Jean-Luc Pasquet, which relies entirely on traditional handcrafting and tells the stories of regional winemakers and distillers with its Trésors de Famille series.

Tasting Notes:

  • Nose: Beeswax, ripe banana, kumquats and bergamots, honey, quince paste and jelly.
  • Palate: Menthol, tobacco and oak, herbal tea, thyme, linden, cinnamon rolls with raisins, licorice.
  • Finish: Powerful and long-lasting with spicy and sweet notes.

Under the leadership of Jean-Luc Pasquet and his wife Amy, traditional production methods are maintained.
