This single-cask bottling from a refill bourbon barrel is part of Cask Series 027, with which North Star Spirits marked its 10th anniversary. The Aberfeldy single malt was distilled in February 2014 and bottled in March 2026 after 12 years of maturation. The cask yielded 320 individually numbered bottles.

The whisky was bottled at its natural cask strength of 52.8%, with natural colour and without chill filtration. Fresh fruit and citrus combine with the distillate's natural sweetness and maltiness before bread, pepper and coffee-time pastries take the profile in a spicier, pastry-like direction.

Tasting Notes:

• Nose: Fresh, bright summer fruits and crisp apple define the nose.
• Palate: On the palate, citrus fruits meet a touch of pepper and freshly baked bread.
• Finish: The finish recalls an Aulds Yum Yum pastry, accompanied by a latte made with a double espresso.

Distillery/Bottler:

Aberfeldy Distillery is located in the town of Aberfeldy, in the foothills of the central Highlands. The Dewar brothers built it to supply the character-defining malt for their blends, and production began in 1898. Its water still comes from the Pitilie Burn. Longer fermentation times and slow distillation in copper pot stills support the distillery's fruity, honeyed house style.

North Star Spirits is a family-run independent bottler from Glasgow, founded by Iain Croucher in 2016. The company selects individual casks and frequently bottles them at cask strength; its labels provide details including the wood type, distillation and bottling dates, and individual tasting notes. For this anniversary release, North Star selected the Aberfeldy cask and bottled it as part of Cask Series 027.
