For anCnoc Sherry Cask Finish Peated Edition, Knockdhu combines peated and unpeated distillates. Following initial maturation in American oak casks, the whisky receives its finish in Sherry Butts from Jerez. This finishing period adds vanilla and warm spice to its sweet, fruity character, with subtle bonfire smoke providing a contrast.

The edition has been a permanent part of the range since its international launch in 2023 and carries no age statement. It was preceded by a smoky sherry bottling released exclusively in Sweden in 2020, whose success prompted the international edition. The whisky is bottled at 43% in 0.7-litre bottles and comes in a tube.

Tasting Notes:

• Nose: On the nose, sweet honey and tropical fruit mingle with cinnamon and pronounced toffee notes. A delicate scent of bonfire smoke accompanies the aromas.
• Palate: On the palate, caramel-coated apples meet warming spices and pronounced vanilla. The flavour is rich, sweet and smoky.
• Finish: Wood smoke, caramel and vanilla linger in the long finish.

Distillery/Bottler:

anCnoc comes from Knockdhu distillery in Aberdeenshire, founded in 1894. John Morrison chose the site for its nearby barley fields, railway connection and natural springs on the Knock Estate. Spring water from Knock Hill is still used for mashing. While Knockdhu refers to the black hill, the brand name anCnoc simply means “the hill”. For its peated whiskies, the distillery uses regionally sourced barley dried over peat from Aberdeenshire.

Knockdhu uses Oregon pine washbacks and double distillation in copper pot stills with long, slender necks. Its cooling system has a distinctive feature: the coiled cooling pipes from both stills share a single water tank. For the first distillation, an upstream heat exchanger supplements this cooling, while the spirit from the second distillation condenses exclusively in the coiled pipe.
