Pedro Ximénez sherry casks have a particularly strong influence on the eight-year maturation of Blackforest Wild Whisky Sherry Cask. Alongside sherry casks, new American white oak and Cognac casks are used. Wild sources its sherry casks directly from Jerez de la Frontera and fills them with whisky just a few days after they have been emptied. Their influence is evident in this bottling’s intense sweetness and fruity aromas.
The whisky is made with spring barley grown by Wild and water from its own spring. The barley is dried over a peat fire. Wild uses clarified mash and distils the single malt twice before cask maturation begins. It is bottled at 42% in a 0.5-litre bottle.
In 2019, Sherry Cask was named Germany’s best whisky at the Internationaler Spirituosen Wettbewerb. The orange label with its distinctive horned animal head also gives the bottle an unmistakable appearance.
