Bombay Sapphire draws the aromas of its ten botanicals into the gin through vapour infusion. During distillation, the ingredients sit in perforated copper baskets above the liquid. Rising alcohol vapour passes through them and carries their aromatic compounds, rather than the botanicals being boiled directly in the still.

The recipe includes juniper berries, lemon peel, coriander seeds, angelica and orris roots, bitter almonds, liquorice, cassia bark, cubebs and grains of paradise. The blue miniature bottle contains 0.05 litres of gin at 40% alcohol and is offered without gift packaging. Its aromatic character brings citrus and juniper together with distinctly peppery spice.

Tasting Notes:

• Nose: On the nose, juniper and lemon peel sit alongside a sweet impression of lemon meringue pie filling. Black and white pepper and other spice notes complement the aroma, while vegetal tones remain subtle.
• Palate: The gin opens light, delicate and slightly sweet on the palate, with restrained juniper, lemon peel and coriander. Strong pepper and chilli spice then emerge, alongside notes of cooked vegetables.
• Finish: Juniper lingers on the finish with a pine-like note. A subtle hint of lavender accompanies the varied peppery spice.

Distillery/Bottler:

Bombay Sapphire is produced at Laverstoke Mill in Hampshire, England. Ivano Tonutti is responsible for selecting the botanicals and maintains long-standing relationships with suppliers. The distillery combines historic Carterhead stills named Tom and Mary, dating from the 1830s, with the newer copper stills Henry and Victoria, each with a capacity of 12000 litres. Vapour infusion is central to its production method.
