For Black Bush 80/20, Bushmills single malt is finished in selected Pedro Ximénez sherry casks. It accounts for 80% of the blend; the remaining 20% is Irish grain whiskey. This variant was created for travel retail. The whiskey is offered at 40% ABV in a 1 litre bottle with a tube.

The Pedro Ximénez finish deepens the dried-fruit and sherry notes, particularly the impression of caramelised raisins. Fruitcake and toasted nuts are joined by vanilla, honey and oak spice. The whiskey is not smoky; it contains caramel colouring and is chill-filtered.

Tasting Notes:

• Nose: On the nose, fruitcake and pronounced sherry sweetness mingle with caramelised raisins, walnut and honey. Candied orange peel, ripe peach and a syrupy-sweet muesli-bar note add to the fruitiness.
• Palate: The whiskey feels soft and silky on the palate. Toasted nuts and almonds, allspice and ripe peach sit alongside vanilla, dried fruit, toffee and gentle oak spice.
• Finish: Sherry sweetness, caramel and spices linger through the long finish. A tingling citrus accent and ripe peach provide a fruity close.

Bushmills makes its whiskey at The Old Bushmills Distillery in Bushmills, County Antrim, Northern Ireland. The distillery draws its water from Saint Columb’s Rill, a tributary of the River Bush. Malt distillation, maturation, blending and bottling all take place on site. The single malt used in this 80/20 variant is triple-distilled.

A regional distilling licence dating from 1608 links Bushmills to a long history of whiskey-making; the distillery was rebuilt after a fire in 1885. The Old Bushmills Distillery Co. Ltd is based in Bushmills, County Antrim.
