Special Features:

The whisky was matured entirely in freshly emptied, still-damp first-fill Pedro Ximénez casks. Pedro Ximénez represents a concentrated Andalusian liqueur-wine style made from sun-dried grapes. This consistent choice of casks shapes the whisky with raisins, dates and figs, followed by dark chocolate, coffee and honey.

The bottling retains its natural colour and was not chill-filtered. At the 2025 London Spirits Competition, it was named Whisky of the Year; in the same year, it won Double Gold and Best of Class at the San Francisco World Spirits Competition.

Tasting Notes:

• Nose: The nose initially opens with honeycomb, caramel, vanilla and sweet plum, followed by toffee and toasted oak.
• Palate: The whisky is soft and smooth on the palate, with an oily mouthfeel. Toffee, chocolate, cinnamon, fig jam and a blend of Asian spices mingle with a subtle note of charred oak.
• Finish: The sweet finish evokes caramel pastries, fig and gently roasted nuts.

Distillery/Bottler:

Callington Mill Distillery is located on the historic mill site in Oatlands, Tasmania. Founder John Ibrahim developed the idea for the distillery after meeting Tasmanian whisky pioneer Bill Lark and travelling to Scotland with him in 2016. At the site, he combined its historic buildings with modern distilling technology developed specifically for the operation.

Callington Mill uses water, malted barley and yeast; the water comes from the nearby Blackman River. Fermentation lasts seven days. The distillery matures its whisky in oak casks from its own cooperage, with particular emphasis on former liqueur-wine casks from Jerez de la Frontera and the Douro Valley. This bottling, matured entirely in Pedro Ximénez casks, follows that approach with particular consistency.
