Callington Mill Rare Cognac Single Cask - Tasmanian Cool Climate Single Malt
Special features: The Callington Mill Rare Cognac Single Cask is a single malt whisky from Australia, produced at the Callington Mill Distillery in Tasmania. This distillery was founded in 2016 by John Ibrahim and uses locally malted barley. The whisky matures in a French Limousin oak cask that previously contained cognac. This special cask maturation imparts flavors of ripe stone fruits, dried apricots, warm vanilla, and a subtle note of nutmeg. The bottling comes in a premium box and offers an alcohol strength of 66.4% vol. Additionally, it is a cask strength bottling that has not been chill-filtered.
Tasting Notes:
- Nose: The nose presents ripe stone fruits and dried apricots, accompanied by warm vanilla and a subtle spice like nutmeg.
- Palate: On the palate, ripe stone fruits and dried apricots are also evident, supported by warm vanilla and a subtle note of nutmeg.
- Finish: The finish is warm and round, harmoniously rounding off the tasting experience.
Distillery/Bottler: The Callington Mill Distillery produces whisky from locally malted barley. The Rare Cognac Single Cask is matured in a Limousin oak cask that previously stored cognac. The selection of casks and the special maturation process significantly contribute to the whisky's flavors. This distillery is still relatively young and has already made a name for itself in the Australian whisky scene.
