Special Features:
The carbonation in Cidre Bouché Brut de Normandie develops through natural fermentation in the bottle. Christian Drouin selects particularly aromatic apple varieties for its ciders. After washing and sorting, the apples are crushed and left to macerate for several hours. This allows the colour to develop while softening the tannins. The crushed apples are then pressed at low pressure.
The juice ferments slowly in tanks during the cold winter months. After repeated racking and filtration, the cider is bottled when the weather becomes warmer, allowing its natural effervescence to develop in the bottles. The cider is not pasteurised. The Brut version combines body and a rich flavour with a pronounced apple character.
This bottling contains 4.5% alcohol and comes in a 0.75-litre bottle without gift packaging. It is offered as a best-before-date item.
Tasting Notes:
- Nose: The nose offers sweet apple notes reminiscent of concentrated apple juice.
- Palate: The cider has a light sparkle on the palate. Sweet-tart, fleshy apple notes meet fine tannins and a slightly grainy sensation. Subtle cellar aromas add another dimension.
- Finish: The fruit fades fairly quickly, accompanied by a brief emergence of acidity. A mouth-coating sensation remains, with slightly earthy, damp notes.
Distillery/Bottler:
The history of the family-owned house Christian Drouin began in 1960 with the purchase of the Fiefs Sainte-Anne farm at Gonneville near Honfleur. Its apple orchards provided the foundation for cider and Calvados production. In 1991–1992, production moved to another farm, dating from the 17th century, in Coudray-Rabut near Pont-l'Evêque. Agricultural engineer and oenologist Guillaume Drouin joined the business in 2004 as its third generation and took over its management in 2013.
The family's orchards of standard apple trees lie between Gonneville-sur-Honfleur and Coudray-Rabut. Around thirty apple varieties grow there, with differing levels of bitterness, sweetness and acidity. The fruit is gathered between September and December at optimal ripeness. The house also processes apples from other farms in the region.
