Cotswolds Sherry Cask matures entirely in American and Spanish oak Hogsheads and Butts previously seasoned with dry Oloroso or sweet Pedro Ximénez sherry. It forms part of the Cask Expressions Collection. For each annual batch, whiskies from a distinct selection of casks are married. This bottling is bottled at 57.4%.

Dried fruit, dark chocolate and baking spices shape its sherry-cask character. The whisky is not smoky, retains its natural colour and is bottled without chill filtration.

Tasting Notes:

• Nose: On the nose, brown sugar and cherry pie mingle with a hint of roasted coffee beans.
• Palate: The whisky feels dense and rich on the palate. Dark stone fruit and chocolate take the lead, accompanied by a subtle note of toasted almonds.
• Finish: The long finish combines peppery oak spice with notes of dried fruit.

Distillery/Bottler:

Daniel Szor founded Cotswolds Distillery in 2014 after leaving his career in London's financial sector. The barley fields around his home inspired him to make whisky in the Cotswolds. The distillery opened its doors in July 2014 and released its first single malt in October 2017. Sherry Cask is an official distillery bottling under its own Cotswolds brand.

The distillery uses only locally grown Cotswolds barley for its single malts. At Warminster Maltings, the barley is turned by hand on traditional malting floors. The wort then ferments in steel tanks using two yeasts, Anchor and Fermentis. Fermentation lasting more than 90 hours encourages the formation of fruity esters. During double distillation, the heart cut begins and ends comparatively early, capturing fruity compounds while keeping heavier components out of the spirit destined for cask maturation.
