Cotswolds Wildflower Gin No. 3 adds a herbal blend to a classic gin foundation: its London Dry base contains juniper, coriander and angelica. Essences of hand-picked genepi, a plant in the Artemisia genus, are added alongside mint, yarrow and other selected botanicals. The Wildflower range takes its inspiration from the meadows of the Cotswolds; No. 3 is made in small batches.

The Wildflower infusions are lightly sweetened. In No. 3, however, lively citrus freshness, herbs and a dry finish remain to the fore. The gin has a green sheen and is bottled at 41.7% in a 0.7-litre bottle.

For a Gin Spritz, serve No. 3 with tonic water over ice. A lime wedge complements its citrus notes.

Tasting Notes:

• Nose: Juniper and pine combine with candied lime on the nose. A hint of anise adds to the vegetal and fruity impressions.
• Palate: The gin shows lively acidity and intense herbal notes on the palate. The mouthfeel is refreshing.
• Finish: The finish is cooling and pleasantly dry. Mint and anise shape the fresh aftertaste.

Distillery/Bottler:

The Cotswolds Distillery opened its doors in July 2014. Its founder Dan is from New York and spent many years working in London's financial sector before moving to the Cotswolds with his family. The barley fields around his home gave him the idea of making whisky there. The distillery was built on a nearby unused site.

Before the first whisky had matured, the team turned its attention to developing a gin. During two months of trials, they produced 150 individual botanical distillates and tested more than 60 gin recipes. The result was Cotswolds Dry Gin. Gin subsequently remained an important part of the range, with the Wildflower bottlings adding combinations of gin and botanical essences.
