CRAFTVOL. Palmische Birne focuses on the character of the pear variety that gives it its name. Selected regional fruit undergoes two distillations, first to produce low wines and then a refined spirit, yielding a pear spirit at 40% alcohol. The bottling contains 0.5 litres and has no added colouring.

Its aromatic range includes dried pear and nutty hints, alongside a full-bodied character. The concentrated pear character remains present on the palate.

Tasting Notes:

• Nose: The nose reveals an intense, concentrated pear aroma with hints of dried pear and nutty notes.
• Palate: The pear fruit carries through to the palate with hints of dried pear and nutty notes. The texture feels velvety, accompanied by delicate sweet and fruity notes.
• Finish: The long finish feels fresh and clear, with a subtle spicy note.

Distillery/Bottler:

Manufaktur Jörg Geiger in Schlat grew out of a distillery. Working with fruit spirits sparked an interest in old, almost forgotten fruit varieties. Particularly in years with abundant harvests, the company also turns its WiesenObst into spirits, preserving the fruit aromas beyond the harvest season.

The first distillation takes place towards the end of fermentation and produces low wines. For the subsequent spirit distillation, these are heated slowly in a copper still. Over six to nine hours, the aroma fractions are separated and the heart cut is selected. The spirits then mature for years; depending on the distillate, the company uses wood, glass and, finally, stainless steel. Over several months, spring water is added gradually to bring the spirits to a bottling strength of 40%.
