Special Features:

Dalmore 12 combines bourbon and sherry influences through a split maturation. The whisky first spends nine years in former bourbon casks made from American white oak. Half then remains in these casks, while the other half continues to mature in Matusalem Oloroso sherry butts from Gonzalez Byass. The two portions are brought back together before bottling.

This twelve-year-old bottling belongs to The Dalmore's Principal Collection. Its non-smoky character combines citrus fruit with chocolate, spices and sherry. The whisky is bottled at 40% alcohol in a bottle containing 0.7 litres and comes in gift packaging.

Tasting Notes:

• Nose: On the nose, citrus fruit and chocolate mingle with aromatic spices.
• Palate: The palate reveals concentrated citrus fruit alongside Oloroso sherry and a hint of vanilla. Bitter orange and dried fruit notes add to these flavours.
• Finish: Roasted coffee and dark chocolate stand out in the finish.

Distillery/Bottler:

Alexander Matheson founded Dalmore in 1839 in Alness in the northern Highlands. The Mackenzie family later helped shape the distillery's history; Dalmore has belonged to Whyte & Mackay since 1960. For many years, the twelve-year-old Single Malt was its main own bottling, before the range expanded to include other ages and special editions.

Unusually shaped stills are a distinctive feature of Dalmore's production. The wash stills used for the first distillation have flat tops, while water cooling around the necks of the spirit stills encourages reflux of condensed vapour. The distillery also uses stills of different sizes. The resulting spirits are combined before the casks are filled. For maturation, Dalmore frequently uses former sherry casks that previously spent many years in soleras.
