Discarded Banana Peel Rum gives two ingredients another use: Caribbean rum previously used to season whisky casks at William Grant & Sons, and banana peels. The rum rests in the casks to impart aromas to the wood for subsequent whisky maturation. It then becomes the base for this spirit flavoured with banana peel extract.

The banana peels come from flavour production, where the fruit pulp is processed and the skins are left over. To make the extract, the peels are dried, fermented and steeped in alcohol for two weeks. The rum and extract are then combined and allowed to marry for a further two days.

The miniature contains 0.05 litres at 37.5% alcohol. The bottle and labels are made from recycled materials and are fully recyclable. This sweet, fruity rum can be enjoyed over ice, mixed with ginger ale or used in a Banana Daiquiri.

Tasting Notes:

• Nose: The nose recalls banana bread and dark sugar syrup. Cinnamon and buttery caramel complement the sweet baking notes.
• Palate: On the palate, banana bread gives way to banoffee pie, a banana and toffee dessert. Caramel-rich date cake, fudge and milk chocolate-coated raisins add further flavours.
• Finish: Candied ginger leaves a warming spiciness on the finish.

Discarded Spirits Co. is part of William Grant & Sons and develops spirits from ingredients that would otherwise go unused. It began with a sweet vermouth made with cascara, the outer husk of the coffee cherry. Banana Peel Rum followed as the brand's second release. The concept also extends to a vodka that uses residues from winemaking, including grape skins, seeds and stalks. Discarded thus draws on several areas of production rather than limiting itself to a single reused ingredient.
