Special features: The Don Papa 7 Year Rum is produced on the Philippine island of Negros, known as the "Sugar Island." It ages for seven years in barrels made of American oak and Rioja wine casks, giving it a complex flavor profile. The rum is named after Dionisio Magbuelas, also known as "Papa Isio," a significant leader of the Philippine Revolution.
Tasting Notes:
- Nose: Aromatic citrus zest, mango, and roasted hazelnuts. Along with sweet syrup notes, vanilla, and elegant spices.
- Palate: Full-bodied and balanced on the tongue. Powerful fruit notes combine with vanilla cream and caramel. There are also subtle herbal notes and dry toasted oak.
- Finish: Long-lasting, with lingering fruit notes, vanilla, and dark toffee.
Distillery/Bottler: The Bleeding Heart Rum Company was founded in 2011 by Stephen Carroll, a former manager of Rémy Cointreau. It is based in Bacolod City on the island of Negros and is dedicated to producing high-quality rums that preserve and promote the traditions of the region.
