Doorly's 12 brings together two cask influences: the blend combines rums aged for twelve years in former bourbon casks and former Madeira wine casks. Maturation takes place in small American white oak casks. Molasses forms the base, with heavy pot-still distillates blended with lighter column-still distillates. Distillation, maturation, blending and bottling all take place on Barbados.

The rum is bottled without added sweeteners or flavourings. The 0.7-litre bottle contains 43% alcohol and comes in gift packaging. A blue parrot appears on the label, while black and turquoise elements define the presentation. The rum can be enjoyed neat or over ice.

Tasting Notes:

• Nose: The nose is rich and sweet. Tropical fruit aromas combine with caramelised apple and a delicate cocoa note.
• Palate: The rum is full-bodied and viscous on the palate. Light sugar syrup and toasted cinnamon complement chocolate, peaty notes and oak. Dried fruit, banana and grapes add further flavours.
• Finish: Brown sugar meets pepper and further spicy notes in the long, warming finish. The sweetness remains restrained enough not to dominate the aftertaste.

Distillery/Bottler:

Doorly's belongs to Foursquare Rum Distillery in St. Philip, Barbados. The distillery occupies the site of a former sugar factory. Behind it is the Seale family, whose rum business began in 1926: they initially bought and blended rums for sale under their own name. Richard Seale continues this work as the fourth generation, overseeing distillation and maturation. In 1996, he designed new stills for Foursquare. Combining pot- and column-still distillates is also part of the production method for twelve-year-old Doorly's.
