Rhubarb and ginger give this gin-based liqueur its sweet, spicy character. To make Edinburgh Rhubarb & Ginger, freshly cut rhubarb and ginger are steeped in classic Edinburgh Gin for four weeks. This maceration brings the flavours of the ingredients together. The miniature contains 0.05 litres at 20% alcohol.

Edinburgh Gin Classic London Dry forms the base. Its botanicals, including lemongrass and lavender, complement the sweetness of rhubarb and the spice of ginger. The liqueur can be served over ice or with Prosecco. Ginger ale makes a suitable mixer for a long drink, complemented by a slice of lime or some lime zest.

Distillery/Bottler:

Edinburgh Gin was founded in 2010 by Alex and Jane Nicol. They initially sold their gin from a van at gardening events. The distillery later expanded beyond its Rutland Place site: a second production facility opened in Leith in 2016, featuring the 1,000-litre still The Gin Genie, whose name pays tribute to David Bowie.

For its London Dry gins, Edinburgh Gin combines distillation in copper stills with vapour infusion. Juniper and coriander are processed using conventional distillation, while lighter botanicals release their aromas into the alcohol vapour. This work with different extraction methods underpins the range of gins and gin-based liqueurs.
