Silver birch sap from Kincardine Estate gives this Royal Deeside gin its distinctive local connection. The sap is distilled together with the botanicals. The recipe combines juniper with pink peppercorns, rosehips, heather, milk thistle and citrus fruits, among other ingredients; distillation takes place in a traditional copper still.

This London Dry Gin combines a pronounced juniper character with citrus freshness, delicate floral notes and a warm, earthy, slightly balsamic backdrop. It is bottled at 42% in a 0.7-litre bottle. An orange zest garnish is recommended for a gin and tonic.

Tasting Notes:

• Nose: On the nose, pink peppercorns and ripe citrus fruits mingle with a subtle floral note.
• Palate: The gin feels soft, creamy and velvety on the palate. Pronounced juniper meets lively citrus notes.

Distillery/Bottler:

Steven and Lynne Duthie founded Esker Spirits in October 2015. This followed nearly two years of experimenting with a small copper still in their kitchen. They set up their first commercial distillery in a workshop in their own garden. In early 2017, the business moved to Kincardine Estate in Royal Deeside, where the couple had already been collecting silver birch sap for their gin.

Esker carries out both distillation and bottling at its own distillery, keeping both stages in the family business’s hands. The name Esker refers to the ridge formed by glaciers on which the distillery stands.

Facts:
