Special Features:

This single-cask bottling presents Fettercairn after 30 years of maturation in a hogshead. The whisky was distilled in October 1995 and matured entirely in cask 2834. Andrew Symington personally selected the cask for Symington's Choice within the Cask Strength Collection. Signatory Vintage bottled the whisky in April 2026 at a cask strength of 58.9%, without chill filtration or added colouring. The cask yielded 147 bottles.

Its mature, fruit-forward Highland character combines apples and pears with a hint of peach and citrus, alongside honey, vanilla and dried fruit. Malt, toffee, caramelised nuts and gentle oak lead to delicate spices and a long, dry finish.

Tasting Notes:

• Nose: The nose combines ripe apples and pears with a hint of peach and a delicate citrus note. Gentle oak, honey and subtle spices accompany the fruit.
• Palate: The whisky is full-bodied, dense and oily on the palate. Dried fruit, malt and vanilla meet beeswax, runny honey, toffee, caramelised nuts and warm wood.
• Finish: The finish is long, combining a spicy, dry character with oak, fruit, sweet malt, sandalwood and subtle herbal spice.

Distillery/Bottler:

Fettercairn Distillery, which opened in 1824, stands at the foot of the Cairngorms. Since the mid-1950s, it has used a distinctive cooling ring on its stills: water flows over and cools the copper, causing more vapour to condense inside so that only the lighter vapours rise for further processing.

Andrew Symington founded Signatory Vintage with his brother in 1988 after discovering the individual characteristics of whisky casks while working at Prestonfield House Hotel in Edinburgh. The company gained a new base when it acquired Edradour Distillery in 2002, and by 2007 its operations had moved entirely to Pitlochry. As an independent bottler, Signatory selects individual casks and showcases their distinct character through separate bottlings.
