The combination of several cask types shapes this Irish blend: malt and grain whiskeys mature in bourbon casks, French oak casks and new American oak casks before the blend is finished in Caribbean rum casks. The whiskey is bottled at 43% in a 0.7-litre bottle, is not chill-filtered and contains colouring.

Grace O'Malley Rum Cask combines intense notes of butterscotch and caramel with toasted grain. Ripe banana, pineapple and mango add tropical accents, while black pepper and ginger provide a spicy contrast to the sweetness. The long, smooth finish remains sweet, carrying notes of rum and a light saline touch.

Distillery/Bottler:

Inis Tine Uisce Teoranta bottles this whiskey under the Grace O'Malley brand. The brand began as a joint project involving County Mayo entrepreneur Stephen Cope, Irish marketing specialist Jeff Burns, Stefan Hansen and Hendrick Melle. During its international expansion, Master Blender Paul Caris, who had previously worked as a winemaker, collaborated with the Great Northern Distillery on distillation, blending and cask management. The brand is named after the 16th-century Irish seafarer Grace O'Malley.
