Habitation Velier Providence White (Distillery de Port au Prince)
Special features: This extraordinary white rum is made entirely from the Cristalline sugar beet, which is cultivated in Saint-Michel de l’Attalaye, Haiti. After an initial fermentation, the juice is distilled in a 380-liter Müller pot still to 25 to 30% alcohol content. For the second distillation, which increases the alcohol content to 72%, a 1,500-liter Müller pot still is used at the Distillery de Port au Prince. This process gives the rum remarkable purity and complexity. It is bottled at 59% alcohol content, without additives or coloring, which underscores its authenticity.
Tasting Notes:
- Nose: Intense and enveloping with aromas of guava, chlorophyll, honey, fresh sugarcane, elderflower, coconut husk, and freshly cut grass.
- Palate: Clear and generous with notes of red fruits, thyme, brown sugar, pineapple, and white pepper.
- Finish: Elegant and smooth with aromas of fresh sugarcane juice, lily, cut hay, as well as herbal and vegetal notes.
