Special Features:

Providence White showcases Haitian rum without cask ageing. Its Cristalline sugar cane comes from Saint Michel de l’Attalaye. The first distillation takes place there in a directly heated Müller still with a capacity of 380 litres, producing a spirit at 25 to 30% alcohol. The distillate is then distilled again at Distillerie de Port-au-Prince, where a 1,500-litre Müller still with four plates brings it to 72%.

This release was distilled entirely in pot stills in 2021. Its ester content is 289 grams per hectolitre of pure alcohol. The rum is bottled without added sugar at 59% in 0.7-litre bottles. The drawing of the still on the label also gives its production method a visual presence.

Tasting Notes:

• Nose: The intense nose combines guava, honey and fresh sugar cane with green chlorophyll notes, elder, coconut shell and freshly cut grass.
• Palate: The palate is clean and generous. Red fruits and pineapple meet thyme, brown sugar and white pepper.
• Finish: The finish is supple and elegant. Fresh sugar-cane juice, lilies and cut hay mingle with herbal and vegetal notes.

Distillery/Bottler:

Founded in 2018, Distillerie de Port-au-Prince is one of the Caribbean’s small rum distilleries. Master distiller Herbert Linge Jr. and his family draw on their history in Haitian rum production, reviving methods used by earlier generations. Providence is the distillery’s rum brand.

Habitation Velier works directly with the respective rum producers for its bottlings. The focus is on rums distilled entirely in pot stills and on the differences between stills, origins and production methods. The range contains no sugar, colouring or other additives and presents its rums at high strength or cask strength.
