Awayuki combines the Junmai brewing style with lively bubbles and a light, fruity-sweet character. This sparkling sake comes from Japan’s Hyogo prefecture and contains 5.5% alcohol. Its name roughly means “light snowfall”. It comes in a 0.3-litre bottle.

Alongside fruit, nuts and vanilla, its aromatic range includes tropical fruit, banana cream, honeycomb and gentle rice notes. Peach and blossom round out this character. Serve Awayuki well chilled in a champagne flute as an aperitif; it can also be used as a base for cocktails.

Hakutsuru Sake Brewing Co., Ltd. has been brewing sake since 1743 in Nada, a district of Kobe in Hyogo prefecture. The company’s name means “white crane”. In Japan, this bird is a symbol of good fortune and continues to shape the company’s name and visual identity.

The company’s development work includes its own rice variety, Hakutsuru Nishiki. Developed over eight years by crossing Yamadaho with Tankan-Wataribune, it was created for the highly polished rice grains used in premium sake. The range extends from milky, cloudy Nigori sake to Junmai Daiginjo and sparkling bottlings such as Awayuki.
