Rather than a consecutive seventeen-year maturation, this combines two distinct age and cask profiles. Hellyers Road Distillery is near Burnie in north-western Tasmania and grew out of a dairy farmers’ cooperative in 1997. Its name commemorates surveyor Henry Hellyer, who opened a route through the local bushland in 1827. The distillery stands along the historic route leading from the coast into the mountainous hinterland. Descendants of the original farming families remain involved in the company.
Experience in dairy processing informed the design of unusually tall stills. Hellyers Road distils slowly, and the height of the stills encourages reflux of vaporised alcohol within them. The cut points between distillation fractions are determined through sensory assessment. Its general production methods also include temperature-controlled fermentation averaging 50 hours at no more than 32 °C. The whisky matures in warehouses around the distillery, some near the Bass Strait, where the coastal climate is cool and humid.
