Six years in ex-Moscatel casks make the finishing period a substantial part of this Highland Single Malt’s sixteen years of maturation. Thompson Bros. selected whisky from an unnamed Highland distillery for this release. Citrus fruit, sweet praline and pastry notes, and spicy oak shape its character.

The whisky was bottled in July 2026 at 45.1% alcohol. It is non-chill filtered and contains no added colouring, so it may become cloudy at low temperatures or when water is added. The 0.7-litre bottle features a label designed by KMGYEAH with an illustration of a sardine tin.

Tasting Notes:

• Nose: Pronounced orange peel aromas also recall flamed blood orange peel. White grapefruit contrasts with the sweetness of honeycomb and hazelnut pralines. Floral nuances appear in the background.
• Palate: On the palate, the whisky evokes chocolates filled with orange cream. Milk chocolate and caramel waffles meet wholemeal biscuits with melted butter and further hazelnut notes.
• Finish: A touch of cinnamon accompanies returning orange and honeycomb notes. Vanilla and a note reminiscent of citrus-vanilla cream add to the finish before the spice gives way to toasted oak.

Distillery/Bottler:

Thompson Bros. is run by brothers Simon and Phil Thompson from Dornoch. Exploring old whiskies at the Dornoch Castle Hotel bar inspired their ambition to distil their own. With support from a crowdfunding campaign, they began producing whisky in 2017. Their Dornoch Distillery occupies a former fire station dating from the 1880s.

While their own whisky matured, the brothers began independently bottling spirits from other distilleries. This developed into a range of more than 500 individual releases, including older Scottish single malts and Caribbean rum. Thompson Bros. is the independent bottler of this sixteen-year-old Highland Malt; the distillery of origin remains unnamed.
