For Noir Burgundy Yeast, Holyrood combines East Lothian Pot Still Malt with Pinnacle M and Maurivin B wine yeast. The whisky matures in ex-bourbon casks and Burgundy barriques and is bottled at 47.4% in 0.7-litre bottles. It is non-chill-filtered and contains no added colouring.
Dark and red fruit notes shape the profile without obscuring the underlying maltiness. Pomegranate, blackcurrant and candyfloss give way to raspberry jam on toast, brandy snap, cranachan, vanilla and malt biscuits.

Holyrood Distillery opened in 2019 as the first single malt distillery in central Edinburgh since 1925. Noir Burgundy Yeast is Holyrood’s own official bottling. The distillery deliberately begins building flavour through its choice of malt and yeast, using not only traditional distilling yeasts but also strains employed in beer, wine, sake and Champagne production. Cask maturation adds another layer of aroma to this foundation.
