Special features: The Holyrood Distillery in Edinburgh relies on an unusual combination of Scottish pot still malt and brown malt, which is primarily used in dark porter beers. Additionally, specially selected red wine yeasts (Pepe Nero and Toro Nero) are used, giving the whisky a unique depth. The maturation in Oloroso sherry casks rounds off the flavor profile with nutty and fruity notes.
