Hyde No.6 Special Reserve brings together 18-year-old single malt and 8-year-old single grain Irish whiskey. Both components were initially matured in charred American bourbon casks. They were then married for a further nine months in toasted Spanish vintage Oloroso sherry butts. Each of these sherry casks holds 491 litres and provides the second type of wood in the maturation that Hyde calls “Double Wood”.

The whiskey is bottled at 46% in a 0.7-litre bottle. It is non-chill-filtered and contains added colouring.

Tasting Notes:

• Nose: The nose combines floral notes with vanilla, sweetness, honey, caramel, chocolate, mixed fruit and spices.
• Palate: The whiskey is smooth, complex, creamy and fruity on the palate, with caramel, honey, apricot and apple accompanying its silky, full-bodied texture.
• Finish: The finish is full-bodied and oak-led, with considerable length.

Distillery/Bottler:

Hyde has its roots in County Cork and follows the tradition of whiskey bonding. The brand sources whiskey from Irish distilleries and focuses on selecting suitable whiskeys and oak casks, as well as cask management and secondary maturation. The vintage casks used for this purpose come from distilleries and bodegas in various countries.

The present-day brand draws on the history of the family’s former Tinkers Cross pub near Bandon in West Cork, where the Hyde family stored cask-matured whiskey. Hyde traces its family tradition associated with whiskey back to 1640.
