Special Features:

The stout finish brings together two different cask maturation styles and Irish brewing culture in Hyde No. 8 Heritage Cask. The blend consists of 75% single grain matured entirely in charred first-fill bourbon casks and 25% single malt from toasted first-fill Oloroso sherry casks.

Hyde works with the Cotton Ball Craft Brewery in Cork for the finishing stage. The brewery first ages its stout for three months in former bourbon casks made from American white oak. Once the beer has been emptied, the whiskey spends a further six months in these casks. This additional beer-cask maturation complements the grain and malt components, which were initially matured separately.

This triple-distilled edition is limited to 5,000 bottles. The whiskey is bottled at 43% without chill filtration, and each bottle contains 0.7 litres.

Tasting Notes:

• Nose: The nose offers a full malty aroma accompanied by sweet vanilla and notes of roasted coffee beans.
• Palate: On the palate, sweet biscuit notes combine with a hoppy character and the flavour of roasted coffee beans.
• Finish: Sweet caramel lingers through the long, soft and creamy finish.

Distillery/Bottler:

Hyde continues the Irish tradition of whiskey bonding: the company selects whiskey from other Irish distilleries and oversees its further maturation and finishing in selected casks. Hyde sources these casks directly from distilleries and bodegas. The company also commissions new-make spirit to its own specifications and matures it in its own casks at the bonded warehouse in Little Island, County Cork.

The family's history in the whiskey trade dates back to 1640. At the family pub in Tinkers Cross near Bandon in West Cork, whiskey matured in a shed behind the building. Cask selection and maturation remain central to Hyde's work today. The whiskey matures in County Cork's mild, Atlantic-influenced climate.
