Special features: This Islay Rum Overproof represents the second batch in the experimental fermentation series of the Islay Rum Company. It combines five separate distillation runs that incorporate both short (3 weeks) and long (6 weeks) fermentation techniques. The short fermentations use commercial yeast with fresh dunder, while the longer ones employ a mix of wild yeasts, commercial yeasts, aged dunder, and local Islay bacteria. The result is a deeply complex, funky Overproof rum that balances intensity with precision. Although it is somewhat more voluminous than the first batch, no compromises were made in flavor development.

Distillery/Bottler: The Islay Rum Company is the first and only rum distillery on the Scottish island of Islay. It was founded in January 2022 and is located in the "Old Lemonade Factory" in Port Ellen. The distillery uses a custom-made copper pot still with twin retorts that creates a "triple distillation" effect. By utilizing renewable energy and innovative distillation techniques, it produces authentic, handcrafted rum that complements the rich distilling tradition of the island.
