A beer-cask finish gives The Cross Batch 3 its distinctive touch: after maturation in three former bourbon casks, the whiskey was finished in a cask that had previously held Citra Tuxedo Black IPA from Western Herd brewery. The blend brings together grain whiskeys from different Irish distilleries.

The third release was a collaboration between Louise McGuane at Chapel Gate Whiskey and Mareike Spitzer of Irish Whiskeys. It was presented at the Irish Whiskey Weekend in October 2021. The release comprises 120 bottles; the whiskey was bottled at 46% alcohol in 0.5-litre bottles.

Tasting Notes:

• Nose: On the nose, apricot and citrus zest mingle with malt and vanilla.
• Palate: On the palate, candied oranges meet malt and bitter almond, alongside fruity impressions reminiscent of fruit salad.
• Finish: Bitter almond and citrus notes linger through the medium-length finish.

J.J. Corry is a whiskey-bonding brand founded by Louise McGuane. Its work begins with selecting spirits from Irish distilleries and extends through cask maturation to creating its own blends. The whiskeys mature in the Atlantic Rackhouse on the family farm in Cooraclare, County Clare. The company sources casks for this purpose, including sherry casks from Spain, bourbon casks from Kentucky and tequila casks from Mexico.

The different casks form a library of flavour profiles. Regular cask checks and tastings help determine which whiskeys to marry and which are suited to a single-cask release. This approach connects the selection of spirits with carefully directed maturation.
