For the second Fino edition, Anthony Wills and Robin Bignal selected 20 Fino Sherry Butts previously used by Bodega Jose y Miguel Martin. Distilled in 2018, the Islay single malt spent at least five years maturing entirely in these casks rather than receiving a brief finish. Kilchoman bottled the limited edition in 2023 at 50%, producing 15,650 bottles.

Fino is a dry style of sherry and gives this whisky a different character from the Oloroso casks Kilchoman uses more often. Green apple, stewed fruit and sweet citrus notes sit alongside nutty impressions, maritime salinity and peat smoke. Its dry character still allows the fresh green-fruit notes to come through. The whisky is not chill-filtered and contains no added colouring.

Tasting Notes:

• Nose: Ashy peat smoke, citrus and walnut mingle on the nose with herbal hints of rosemary.
• Palate: The palate brings warming smoke, toffee, almonds and baked apple. As it develops, the impression grows drier and saltier, while the apple takes on a fresher character.
• Finish: The long, saline finish lingers with lemon, dry ash and a hint of coffee beans.

Distillery/Bottler:

Anthony and Kathy Wills founded Kilchoman in 2005 at Rockside Farm on Islay. The distillery grows barley there and operates its own floor maltings. Kilchoman ferments its wort for around 90 hours and controls its small stills by hand. Maturation and bottling also take place on site. This Fino edition is a distillery bottling drawn from casks selected by Anthony Wills and Robin Bignal.
